El Salvador Cup of Excellence® Winning Farms - Auction June 28, 2007
Lot#: 2 Julia Margarita Martínez Molina - Suiza 
Suiza coffee is a family owned farm located on 21 hectares on the side of a volcano 1650 meters above sea level.  Coffee is harvested with extreme care, only ripe cherries are allowed and cherry post harvest selection is always done in the farm to eliminate any remaining immature bean or dry pods. Coffee is processed in the San Carlos farm, also property of the Menéndez family, under strict quality controls, beginning with depulping within few hours after harvested. Wet Parchment is dropped in tanks and stays there until it reaches adequate point of fermentation, this lasts between 10 to 12 hours. They washed the coffee with clean fresh water to remove the mucilage and dry it on cement patios for 10 to 12 days until reaches 12% humidity. After this, it is storage to secure the quality for a longer period. This exceptional coffee is described as sweet fruits, elegant, complete, sparkling acidity, honey, chocolate, creamy body and caramel. Jury score of 92.13

Lot#: 2 Carlos Roberto Sanchez Lazo Y Cdños. - San Jose Ocaña
San José Ocaña faro was founded in 1623. Cornelio Lazo Arreaga bought the 22 hectare farm and ever since 5 generations have produced coffee. In San José Ocaña, owners promote good relations with workers. In fact, in the middle of last century, they donated land  for people working in the farm and they founded there what is actually Santa Fe Ocaña county. Quality controls are important in the farm. Visual controls, as well as humidity, fermentation and drying process are part of a daily basis routine. Coffee is wet milled and sun dried in patios. The farm also has depulpers, a resttler and a pulp extractor. International jurors described this coffee as clean, elegant and complex, with intense fruity acidity and vanilla notes. These same jurors awarded this outstanding Guatemala with a score of 91.50.

Lot#: 3 Diogenes Muchicon Perdomo - San Antonio
There are shade trees in the farm, such as Guamos and Chachafrutos, They do not burn or cut the shade trees, or use chemical pesticides in the farm.  They use the pulp of the coffee as a fertilizer for the coffee and also for the fruit trees.  The wet milling process in the farm is in the traditional way, they use clean and fresh water for washing the depulped coffee every day. The fermentation takes from 10 to 14 hours and they use the solar parabolic drier. The coffee has sweet, bright lively acidity, citric and complex, creamy and chocolate caramel. It scored 91.18 by the jury.

Lot#: 4 Prodecoorp R.L - Las Termopilas
This farm owned by Milton Canales Sevilla and his family is 1,400 meters (4593 feet) above sea level and its height offers a delicious climate. Las Termópilas has more than 100 workers during the picking season and has an extraordinary management on this farm. This 17 bag lot is fertilized with manure from the  family’s cattle ranch. tasting note are: Honey, bright sweet round acidity, brown sugar molasses with a chewy body. The jury scored it 90.58.
